What is Carbonic Maceration?


Carbonic maceration is a processing method that involves fermenting coffee cherries in a controlled, carbon dioxide-rich environment. Initially developed in the wine industry, this innovative approach to coffee processing utilizes the principles of carbonic maceration—where carbon dioxide replaces oxygen during fermentation—to enhance the extraction of flavors from the coffee cherry.


Unlike traditional fermentation methods, where the pulp is removed early on, Carbonic Maceration allows the entire fruit to interact with the beans during fermentation, resulting in remarkable flavor outcomes.


The Steps Involved in Carbonic Maceration

Here’s how the process happens:

 

 1. Picking the Ripe Cherries

    First, the coffee cherries are picked when they are fully ripe.

 

2. Sealing the Cherries in Tanks

   The cherries are put into tanks with no oxygen. Carbon dioxide (CO2) is added to these tanks to start the fermentation process.


3. Fermenting Inside the Cherries

    Inside the tanks, the cherries begin to break down, and the coffee beans soak up sweet and fruity flavors from the fruit around them.       This can take anywhere from a few hours to several days.


4. Removing the Fruit and Drying

    After the right amount of fermentation, the cherries are removed, and the beans are separated from the fruit. The beans are then dried   and prepared for roasting.
